Meatloaf – edible, not audible.

I dropped into hell Costco yesterday to pick up the usual suspects (coffee beans, meat, milk, eggs, butter, Annie’s Mac and Cheese). I came home with a mountain of ground beef and thought, “hey, I haven’t made meatloaf before.”

The result was actually something edible, so I thought I’d share the recipe.

Squrrell’s “Meat Shaped Like Bread”

 

You’ll Need:

5lbs of ground beef
2 links of mild Italian sausage (casings removed)
3 shallots or 1 spanish onion
4 cloves of garlic
2tbsp Kikkoman soya sauce
Ground pepper to taste
1tbsp olive oil
3tbsp BBQ sauce

Preheat your oven to 350 degrees and get a bread pan ready, lined with parchment paper.

In a small pan on medium heat fry up the shallots, finely chopped, until clear. In the final minute or so, drop in the garlic, minced. Set aside for later.

In a big bowl, mix up the rest of the ingredients (except the BBQ sauce) and, once cooled, add the shallots and mix it up again.

Moosh everything into the prepped bread pan and pop it into the oven for about an hour, or, y’know, until cooked.

Once the loaf’s ready, pour off any pooled liquid and coat the top with the BBQ sauce. Pop it back into the oven, this time on broil, and blast it until the BBQ sauce looks awesome.

Bonus! Alexandria used the leftovers to make a killer sandwich, too.
